How to use / Recipes

Usage: The vanilla flavour is found in both the bean and the seeds. Use the vanilla seeds in dishes as ice cream, custard and crème brûlée to add a gourmet visual delight to your culinary creation. Otherwise, you can also simmer the whole bean in milk, cream or another liquid and pour the mixture into your dish.

Storage: Vanilla beans will dry out and become brittle if left out in the air, so retain them in the aluminium container and store them in a cool, dark area.

Grade: NFN grade, Plump beans, >17 cm length, sourced from Madagascar

Recipe - Vanilla Bean Cupcakes

Colourful vanilla cupcakes for your kids


Cup cakes

200 gm butter, softened

1 3/4 cups (370g) sugar

1 SPRIG Madagascar Bourbon Vanilla Bean Pod or 5ml SPRIG All Natural Vanilla Extract

4 eggs

2 and three quarter cups (405g) self-rising flour

1 cup (250ml) milk

Butter frosting

200g butter, softened

6 cups (900g) icing sugar mixture

1/2 cup (125ml) milk

Sprig natural extracts for colouring food and beverages


For cupcakes: preheat oven to 180°c. Line 24 1/3 cup (80ml), muffin pans with patty cases.

Cream the butter, sugar and vanilla extract with an electric mixer. Add the eggs, one at a time, and beat until just combined.

Add the flour and milk in alternate batches and stir with a wooden spoon until just combined.

Spoon mixture evenly among the patty cases.

Bake for 15-20 minutes or until cooked through. Remove from oven and transfer to a wire rack to cool completely.

For the frosting: use an electric mixer to beat the butter until very pale. Gradually add the icing sugar while beating. Add the milk and beat until well combined.

Divide frosting into small bowls, add the colour of your choice and decorate the muffins.

Recipe -Vanilla Floating Island with Caramel Sauce

A sumptuous dessert from the Swiss and French cuisine with a delicious vanilla and caramel taste



2 cups whole milk

4 large egg whites

Pinch of salt

1/4 cup sugar

8ml SPRIG All Natural Vanilla Extract or 1 split SPRIG Madagascar Bourbon Vanilla Bean Pod

Vanilla bean pod

Caramel sauce

1/2 cup sugar

1-2 tsps SPRIG Demerara Sugar infused with Real Vanilla / Cinnamon

2tbsp butter

100 ml cream


Drop the colours on the inside of a glass and twirl it so that the colours spread.

Mix the vanilla sugar with the cola and lemon juice.

Fill the glass with crushed ice pour the cola mix and top with vanilla ice cream.

Garnish with nuts.
